Thanksgiving reflection.

It’s been a busy weekend filled with family.  On the scale of good and bad, it was mostly good!  Winning.

Tomorrow will certainly be a day of rest.  Or at least a day at home, no company and getting shit done.  I will finish laundry.  I will clean the upstairs bathrooms.  I will put two coats of White Dove in downstairs bathroom.  I do not need to cook dinner as we have Thanksgiving day leftovers and delicious leftover homemade meat sauce. I will take many breaks and read during said breaks.  I may even weed the front beds which are full of weeds.  YES!  IN NOVEMBER!!  Unbelievable.

I just finished Catching Fire, the second book in The Hunger Games trilogy.  I LOVE THESE BOOKS.  They’re brilliant.  I’m a little sad to have begun the third and final book today, although as I type I kind of can’t wait to get in bed and read more!!  My son has already finished all three and cannot stop himself from spilling details to me….!  The movie trailer is fantastic and I can’t wait for the movie this March.

Alrighty.  Enough for today.  Time to put me feet up and relax.  Good night to all and I hope you enjoyed your Thanksgiving.  I sure did.

Happy Birthday honey!!!

We started the day by bringing coffee, cards and presents (lots of candy – he IS the candy man!) in bed.  This was followed by allowing Dad some time to chill in bed and watch a movie.  Then Dad went and got a haircut.  He came home to Coronation Chicken for lunch – one of his favorites and a surprise!  Now he’s off to see The Green Hornet with Laurence, while Gracie and I make his birthday cakes.  Cakes?  Yes, cakes!  The first is a cake I make from scratch that is just out of this world.  It’s called Celebration Cake.  I got it out of a BHG magazine years ago and have never seen it or been able to find it on the Internet since.  So I am very, very glad I wrote it down in my Recipe Book!  It came with a recipe for Vanilla Buttercream Frosting – sooooo easy and soooo delicious.  Recipes for both below.  But since my darling Larry is not a cake fan, Gracie is making her ice cream cake for him.  Mmmmmmm…..he’ll love that.  She lines a square cake pan with Saran Wrap.  Then she lays Oreo’s to cover the bottom.  They fit perfectly.  On top of this goes vanilla fudge ice cream that has been softened.  The final layer is crushed Oreo’s.  Then you freeze it.  It’s good with whipped cream and/or chocolate sauce. Why two cakes?  I, and my inlaws, like cake.  I also need to practice making a fancy cake for my niece’s bridal shower this summer.  While fondant is just gorgeous, I hate eating it and it pisses me off when it’s on a cake.  Thus, I am covering my cake with buttercream.  It doesn’t need to be fondant-perfect, but it needs to look pretty good and smooth.  Thus the need for practice, practice, practice.  Plus, I just like to make cakes.  It’s FUN!!!  I just put together the three layers of cake and crumb-coated them.  They’re in the fridge firming up.  Photos of finished product to follow!  Here’s the cake and frosting recipes:

Celebration Cake

2 1/2 sticks of softened butter

2 cups of sugar

1 tbsp. vanilla

4 tsps. baking powder

1/2 each baking soda and salt

4 eggs (room temp)

3 1/2 cups flour

1 1/2 cups buttermilk

Mix first five ingredients in a big bowl on medium speed for 3 minutes.  Lower speed and add one egg at a time.  Add in half of the flour and all the buttermilk and mix.  Then add the remaining flour.  Pour into three greased and parchment lined cake pans.  Bake for 30 – 35 minutes in a 350 oven.

Vanilla Buttercream Frosting

4 sticks of softened butter

16 oz. of Marshmallow Fluff

2 cups of confectioners sugar

2 tbsp. vanilla

Mix until fluffy.

We’re headed out to dinner tonight and then will bring the birthday cakes to Larry’s folk’s house for dessert.  His sister is visiting too, so it will be nice.  I must remember candles!!!

In other news, I have had a rough couple of weeks.  I had a health scare that was resolved, my mother is a constant source of stress and aggravation (if I’m being honest), my sister is suffering, my surgery is Tuesday, I have a CCK HIDEA scan next week and I wish that it were different.  I’m STRESSED.  But today is a good day.  Larry is here and healthy.  While it may not always be apparent, I adore you Larry.  Our kids are great and we have a great day in store.  So there is much to be thankful for.  But I’m still having a big, fat cocktail tonight.  Or six.

And it snowed again! A lot!

After yesterday morning’s snow we had a bit of a break.  Then it started sleeting and raining.  I had a BYC scheduling meeting last night.  I brought the kids with me since Larry was working late.  Gracie fell down the front stoop on all the ice.  Poor thing.  She’s got a big welt across her back.  Everything was covered in a sheet of ice.  Larry got home around 10pm and it hadn’t started snowing yet.  We got a phone call at 10:30pm that school would have a two hour delayed start!  Love that.  Kids get to sleep and then I still get time alone once they’ve gone.  at 5:00am we got a call that school would be closed!  Yay!  We woke up to 15 more inches of snow!  There is just a ton of it.  Compare today’s shots to the photo I posted yesterday and you’ll get a good idea of how much more snow there is now.  Holy smokes!

The Chicken Curry Casserole I made yesterday was delish!  I have enough to freeze for another supper, which is a home run.  I’m making pulled pork today.  I made the Neely’s Barbecue Sauce yesterday.  That will serve as the sauce for the pork.  I learned an important pulled pork lesson this summer – make the pork first (rub it with spices, cook in crock pot with soda – ginger ale or root beer).  Then, DRAIN all liquid.  Pull the pork and THEN add the sauce.  What a difference. The rub:

Dry Rub:

  • 3 tablespoons paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon brown sugar
  • 1 tablespoon dry mustard
  • 3 tablespoons coarse salt

Cook in crock pot for 6-8 hours on low with 12 oz. of root beer.  Drain completely, pull the pork and then add barbecue sauce.  I like Sweet Baby Ray’s from a bottle and today I’ll be adding homemade Neely’s Barbecue Sauce. Should be Yo-may!!!!!

Kids are happy to play and just be home.  I’m going to do the laundry and some cleaning before heading outside to finish shoveling and have some fun.  Oh, and we didn’t see Idol last night so I’ll be watching that on the DVR while folding laundry.  Poor Larry is on his way to North Carolina…..actually he is probably still in the limo.  It came at 8:30 and his flight is at 11:50….so we’ll see.  Sucks.  He won’t get home until 10:00-11:00 and then he’s got to go right back to work tomorrow.  Not fun.  Then, to top it off, I’m pretty sure Frostbiting will be cancelled again this weekend.  I think the Bay, BYC basin and canals are pretty frozen.  I’m happy to have him home, but he’ll miss being out there.  I’m pretty sure The Boys will find something that “needs to be done down at the JYC”…..something that involves beer.  The JYC is a small structure that used to serve as the main Clubhouse back in the early days.  It’s a pleasant little place and if the sun is shining, it gets nice and warm on a winters day.  Now it is the Junior Yacht Club and it serves as our Sailing Center.  Anyhoo, time to put up the pork.  Have a nice day.  Enjoy the snow if you got it!!!

Began the day by makeing Crock Pot Chicken Cacciatore.…wow.  Did this need help!  I made so many changes, that I’ve changed the name (and perhaps the entire dish) and now it’s absolutely delicious.  How did this ever get 144 reviews that it was great?  Don’t know.  Anyway, here’s the skinny and this one is a keeper.  Larry’s going to LOVE this.

3 lbs. boneless, skinless chicken thighs

1 large onion, sliced thin

2 cans tomato paste

1 can diced tomatoes

1 green pepper (feel free to substitute with red – I will next time)

8 oz. baby bella mushrooms (you could add more if you like)

6 cloves of chopped garlic

3 tsps. Italian Seasoning

3 tbsps. capers

A handful of chopped green olives

2 tsps. kosher salt ( or more to taste)

1 1/2 tsps.  crushed red pepper

1/2 cup dry white wine (or cooking wine)

Lay the sliced onions in the bottom of the pot, lay chicken on top.  In a large bowl, mix all other ingredients together and pour over chicken.  Set crock pot to low for 7 hours…..Mmmmmmmmmm.  SO GOOD.

So, the changes I made from the orignal?  I substituted Italian Seasoning for oregano and basil, left out celery seasoning (didn’t have any) and the olive oil (missed that ingredient entirely – didn’t need it anyway), added a can of diced tomatoes, added 2 tbsps of capers and half a jar of stuffed green olives (they were teeny so I just left em whole), doubled the garlic and – finally – doubled the salt to 2 tsps. (the original was BLANDSVILLE BABY).  The thighs are now falling apart and the dish is a rich, spicy chicken stew… will be amazing over pasta.  Can hardly wait!
